Last night, I decided to make a classic Italian dish: pasta al pesto Genovese. For those unfamiliar, pesto alla Genovese is a traditional Italian sauce originating from Genova, made with fresh basil, garlic, pine nuts, Parmesan cheese, Pecorino Romano, and extra virgin olive oil, all traditionally pounded in a mortar.
For this dish, I used high-quality ingredients:
Garlic, Pine nuts, coarse sea salt
Pecorino Romano and Parmigiano Reggiano
Fresh basil
Extra virgin olive oil
The pasta of choice was fusilli made from Timilia wheat, a unique Sicilian grain.
